Jalisco made history this Friday in the world of gastronomy and agriculture. The Association of Avocado Producers and Exporters of Jalisco (APEAJAL) spearheaded the feat of breaking the Guinness World Record for the largest guacamole ever made, with a certified weight of over 12.6 tons.

Hosted at the Charros de Jalisco Pan American Stadium, the challenge brought together dozens of producers, chefs, and volunteers who transformed the region’s flagship fruit into a living testament to the state’s leading role in production. Jalisco now ranks second nationally in avocado production in Mexico. The previous record was held by the municipality of Tancítaro, Michoacán, with a total of 6.8 tons.

“Today, Jalisco shows the world what its fields are made of. This isn’t just the largest guacamole in history; it’s a reflection of the effort, quality, and passion of thousands of farming families who make our avocados the best on the planet,” emphasized Saúl Medina Tejeda, president of APEAJAL.

The Recipe for a Monumental Feat

Preparing 12.6 tons of this traditional dish required strict food safety protocols and the combination of the following local ingredients:

Avocados: More than 90,000.

Tomatoes: 1,300 kilograms.

Onions: 600 kilograms.

Cilantro: 250 kilograms.

Serrano peppers: 120 kilograms.

Additional ingredients: 65 sacks of limes and 100 kilograms of salt.

Reaching 32 Nations

Medina Tejeda pointed out that this effort represents a key opportunity to strengthen the presence of Jalisco’s “green gold” abroad and continue boosting the sector’s competitiveness. Currently, avocados from the state reach 32 countries, with commercial activity concentrated in the United States, Canada, and Japan.

According to figures from APEAJAL—an organization that brings together more than 3,200 producers and 26 packing facilities in the state—the organization’s exports reached a volume of 164,180 tons of avocados in 2025 alone.

Once the Guinness World Records judges completed the official weighing and certification process under rigorous traceability standards, the monumental guacamole was distributed and enjoyed by the approximately 9,000 people who gathered at the Zapopan venue to witness the historic achievement.
