During the first 11 months of 2022, the national production of chicken, beef and pork meat totaled 6.9 million tons, 2.9% more than that registered during the same period of 2021, this according to reports from the Agri-Food and Fisheries Information Service ( SIAP).

In detail, the organization headed by Patricia Ornelas Ruiz specified that chicken meat was the protein with the highest participation, with a total of 3.4 mt. and a growth of 3.2% versus 2021; Veracruz was the state with the highest production in this period, contributing close to 450,000 tons.

Regarding bovine meat, the accumulated processing up to November was 1.9 mt., a figure that compared to January – November of the previous year, was higher by 2.3%.

For this protein, the largest producer was also Veracruz with a total of 233,382 t., then Jalisco, San Luis Potosí, Durango and finally Baja California.

Finally, for pork, the SIAP indicated that until November, the Mexican pig farm produced 1.5 mt., a tonnage that exceeded by 2.8% that generated during the first 11 months of 2021.

In this case, the state with the highest participation was Jalisco with 363,548 t., and a growth of 4.4%.

For Jalisco, the main producing municipalities are San Juan de los Lagos, Tepatitlán de Morelos, Arandas and Acatic, who together contribute 52.7% to the total value of the entity’s pork production, which in 2021 closed at 20,815 million pesos.

Finally, Jalisco closed its report with a production of 1.52 million tons of eggs, this despite the situation that was experienced in relation to AH5N1 Avian Influenza.

It should be noted that of the 125 municipalities of this state, 118 produce eggs, and only four (Tepatitlán de Morelos, San Juan de los Lagos, Arandas and Acatic) represent 66% of state production.

The SIAP concluded that in addition to Jalisco, other entities that also participate in the national contribution to make the Top 5 are Puebla, Sonora, San Luis Potosí and Yucatán.

Other proteins, little known, but which are also consumed in Mexico: sheep meat, goat meat and their milk

Although pig farming, poultry farming and livestock with their respective proteins participate with 97% of the total production, others such as sheep and goat meat have their main productive exponents in the State of Mexico and Zacatecas, respectively.

In the same period of those 11 months, Mexico produced sheep in just 67,237 tons, these completely diversified, because even the Mexican state with its 125 municipalities barely contributes a little more than 9,000 tons, where there are other participants such as Hidalgo, Veracruz, Jalisco and Puebla. Global sheep farming is led by China with more than 2.4 mt. year.

Finally, for goat farming, which also includes milk, Zacatecas and Coahuila lead production, the first in meat and the second in dairy; At the close of the November record, just over 40,000 tons were produced and slightly more than 168 million liters.
